Once Upon a Vine... & 18/10 Kitchen Couture welcome you to their demonstration kitchen!  It is here that we invite you to watch skilled chefs, from our local community & beyond, demonstrate and educate using new techniques and products!  To learn more about all our instructors, please visit our "CONTACT" page.

How to register for classes:

We would love to have you join us for an evening of Good Wine, Good Food & Good Friends. You may register in person, by phone 604-460-8463,  or by fax 604-460-8443. Please note: Registrations MUST be confirmed by payment. Please see below.

How to pay for classes:

The price of classes is posted on each description. Payment must be made upon registration. We accept cash, debit, Visa, MasterCard, and Amex.

Cancellation Policies:

Payments are non-refundable, however if you can not make it to a class, with a minimum of 48 hours notice you may use your credit towards an upcoming class (based on availability) You are also welcome to send a friend in your place if you are unable to give 48 hours notice.

Gift Certificates:

You are welcome to use gift certificates towards classes, however we ask that you book early to avoid disappointment.

Wednesday, January 27/10 - Easy Rustic Soups & Crusty Italian Bread – $50 per person *Back by Popular Demand!

To help prepare you for the cold months ahead, Chef Dez will show you how easy it is to create flavourful soups and crusty bread from scratch. Tonight we will make Oven Roasted Tomato Soup garnished homemade croutons, flavourful Italian Minestrone, and show you how to make Crusty Italian Bread from scratch that requires no kneading! This bread is amazing and is as beautiful as ones you would pay $5 for at a specialty bakery… and because it requires no kneading, you won’t believe how easy this is! Soup and bread will never be the same in your home again!

Tuesday, February 9/10Cooking for the Love of Your Life – $50 per person

Chef Dez has some great ideas for cooking for your sweetheart – ANY day of the year! Tonight you will learn some romantic recipes from his new book that will be sure to ignite the passion. We will start off with Pan Seared Scallops in Sage Brown Butter, end with Black Forest Tiramisu for dessert, and for the main course in between Chef Dez will make you the recipe he wrote for Patricia Conroy – Patricia’s Mediterranean Chicken! You will have them swooning!

Wednesday, February 24/10Cooking with Guinness Beer – Part 1 - $50 per person

Those of you who have experience Chef Dez’s classes know that he LOVES his Guinness! Come join Chef Dez as we explore Irish cooking with a glass of Guinness beer and Dez’s twist on the following Irish recipes: classic Dublin Coddle, Colcannon with a Guinness Cream Reduction, and Irish Soda Bread – an Irish staple for any meal.

Chef Barnaby returns! Come and enjoy the favourite requests at the Fish House during the Olympics! The medal winning entrees are: Crab Cakes with Angel Hair Pasta; Cantonese Style Prawns with Lobster Sauce; Halibut and “Chips”; Seared Scallops with Burnt orange Glaze; Indian Butter Prawns.

Tuesday, March 9/10 - Cooking with Guiness Beer - Part 2 - $50 per person

Part 1 is not a prerequisite, but both classes will open your eyes, and your taste buds, to the complex flavour Guinness beer can add to a variety of recipes – even if you don’t like to drink Guinness, you will love these dishes! Tonight we explore Irish cooking with a glass of Guinness beer and Chef Dez’s twist on the following classic Irish recipes: Guinness Shepherd’s Pie, Guinness Beef Stew and a Chipotle & Guinness Pasta dish to die for!

Do you have a hard time thinking about great side dishes for your classic Turkey or Ham Dinner? Chef Dez will walk you through some of his favorites like rich Sweet Potato Pesto Gratin, Peppered Cheese Bread, and Dez’s Famous Four Hour Gravy with the most heavenly Garlic Mashed Potatoes you will ever eat. Dez will even talk turkey by sharing with you his secrets for cooking turkey easily and to moist perfection!

Love Mexican food? Chef Dez will take you through his favourite Tex Mex dishes! Tonight we will make a simple but complex tasting Black Bean Soup, incredible Homemade Salsa, the most amazing Chunky Guacamole, and his version of Chicken Mole with the best side dish ever: Black Bean Succotash

Wednesday May 19/10 – Pub Food Kicked up a Notch – $50 per person  *Back by Popular Demand!

Pubs are very popular and the food is enjoyed by many. Chef Dez will teach you how to make some great Pub food at home with three incredible recipes. We will start the class with tender Merlot Sauced Steak Sandwiches that are to die for! This will be followed by the most flavourful Mozzarella Stuffed Hamburger you have ever eaten, and an Irish Pub classic: Guinness Shepherd’s Pie. Soon you will be singing “…where everybody knows your name”

Wednesday, June 2/10 – More Pub Food! - $50 per person

Because the other Pub Food Class he does is so popular, Chef Dez is back with his versions of more great pub food. Tonight we will make Drunken Pig with Garlic Mashed Potatoes, Blackened Chicken Caesar Salad, and the best Loaded Nachos you have ever eaten! Pubs are very popular, the food is enjoyed by many and this class is sure to sell out!

Wednesday, June 16/10 – Cooking with Whiskey - $50 per person

Does your Husband, Father, or Son love whiskey? Then send him to see Chef Dez as an early Father’s Day gift, or come to learn to make these recipes to prepare for him on that special day. Today we will start off with a Whiskey Shrimp Pasta to die for, Pork Tenderloin Medallions served with a Single Malt Pan Sauce and served with Flambéed Mushrooms, and for dessert a Dundee Cake made with scotch soaked fruit and served with scotch infused whip cream.

Tuesday, June 29/10 – Great Picnic Ideas! - $50 per person

Are your picnics boring? Join Chef Dez tonight to get some great recipes for your picnic basket or for the summer in general. Tonight we will show you how easy it is to make mouth watering Ham & Cheddar Scones, an incredible Greek Tabbouleh Salad, Muesli from scratch, Spicy Fennel Nuts, and wash them all down with freshly made Lavender Lemonade.
